Ingredients:
- Any type of fish
- Potatoes, sliced
- Tomatoes, sliced
- Green pepper, sliced
- Lemon, sliced
For the marinade:
- Fresh cilantro and parsley, chopped
- 5 cloves garlic, crushed
- ½ teaspoon salt
- ½ teaspoon fish spices
- 1 teaspoon paprika
- 1 teaspoon cumin
- Juice of 1 lemon
- Corn oil or olive oil
- A little harissa (optional)
Method:
- Prepare the Marinade:
In a bowl, mix all the marinade ingredients together. - Marinate the Fish:
Rub the fish with half of the marinade, and mix the remaining marinade with the potatoes, tomatoes, and green pepper. - Assemble the Dish:
In a baking tray, arrange the tomato slices, then the potato slices. Place the fish on top, followed by the green pepper and lemon slices. - Add the Remaining Marinade:
Mix the rest of the marinade with half a cup of water and pour it around the sides of the tray. - Bake:
Drizzle a little oil on top, then bake in the oven at 200°C (390°F) for 45 minutes, or until fully cooked.
