Refreshing Red Berry Cheesecake – Easy and Quick ♥️
Ingredients:
- 120g biscuits (crushed)
- 50g butter, melted
- 250g sour cream
- 500g mascarpone
- 200g cream
- ½ lemon (juice)
- 150g powdered sugar
- 200g frozen berries
- 50g sugar
- 1 teaspoon cornstarch
- 200g fresh berries
Instructions:
- Prepare the crust:
■ Crush the biscuits well and mix with the melted butter. - Make the cream filling:
■ In a bowl, beat together the sour cream, mascarpone, cream, powdered sugar, vanilla, and the juice of half a lemon for 2-3 minutes until smooth and creamy. - Prepare the berry sauce:
■ Cook the frozen berries with the sugar for 10 minutes, then mash them.
■ Mix the cornstarch with 1 tablespoon of water and add it to the berry sauce. Bring the mixture to a boil and let it cool. - Assemble the cheesecake:
■ Start by adding a tablespoon of the biscuit crumbs to the bottom of each serving dish.
■ Using a piping bag, add a layer of the cream mixture.
■ Place 1-3 fresh berries on top, then repeat with another layer of cream. - Decorate:
■ Finally, garnish with fresh berries and a bit more cream.
