Ingredients:

  • 120g biscuits (crushed)
  • 50g butter, melted
  • 250g sour cream
  • 500g mascarpone
  • 200g cream
  • ½ lemon (juice)
  • 150g powdered sugar
  • 200g frozen berries
  • 50g sugar
  • 1 teaspoon cornstarch
  • 200g fresh berries

Instructions:

  1. Prepare the crust:
    ■ Crush the biscuits well and mix with the melted butter.
  2. Make the cream filling:
    ■ In a bowl, beat together the sour cream, mascarpone, cream, powdered sugar, vanilla, and the juice of half a lemon for 2-3 minutes until smooth and creamy.
  3. Prepare the berry sauce:
    ■ Cook the frozen berries with the sugar for 10 minutes, then mash them.
    ■ Mix the cornstarch with 1 tablespoon of water and add it to the berry sauce. Bring the mixture to a boil and let it cool.
  4. Assemble the cheesecake:
    ■ Start by adding a tablespoon of the biscuit crumbs to the bottom of each serving dish.
    ■ Using a piping bag, add a layer of the cream mixture.
    ■ Place 1-3 fresh berries on top, then repeat with another layer of cream.
  5. Decorate:
    ■ Finally, garnish with fresh berries and a bit more cream.
